Chocolate Sandwich Cookies

When I was about 5 years old, Momma made these cookies. She gave both Bre and I bowls of the cream filling, and let us icing the cookies. The taste of them have so many memories — it’s a taste you’ll never forget.

Cookie:

2 pkg. devil’s food cake mix
4 eggs, lightly beaten
2/3 cup vegetable oil

Cream Filling:

1 pkg. (8 oz.) cream cheese
1/2 cup butter, softened
3 to 4 cups confectioner’s sugar
1/2 tsp. vanilla extract
Food coloring

Beat cake mixes, eggs, and oil (batter will be very stiff) roll into 1-inch balls, place on ungreased baking sheets and flatten slightly.

Bake at 350° for 8-10 minutes, or until slight indentation remains when lightly touched. Let cool.

In another mixing bowl, beat cream cheese and butter. Add confectioner’s sugar and vanilla; mix until smooth. Tint with the food coloring of your choice. Spread icing between two cookies.

Makes 4 dozen.

    It would be fun to have tea party for my birthday, but I don’t know I am going to have a party for my birthday, altho I would like to. We don’t usually have big parties. With 8 kids, we can’t really do that. :o) Only on big numbers, like 18… Not sure about the party, altho it would be fun to have a tea party. Only one problem —- I don’t have a tea set to use for one! LOL I need one tho. hehe, oh well.

    Yes, I asked you momma if she could teach me some embroidery. That would be fun to learn from you girls too. :) I hope we can see each other again soon. Miss you girls.

    Oh and I got to see Expelled! It was so good. Maybe Amanda will want to interview me for her Expelled articles. That would be fun.
